Ingredients
-40 g butter
-100 g shortbreads
-70 g liquid cream
-30 g sugar
-90 g white chocolate
-140 g cheese cream
-140 g cottage cheese
-1egg
-1 lemon

mascarpone cream
-300 g liquid cream
-30 g mascarpone
-4 cl limoncello

Preparation
STEP 1
Preheat oven to 120°C

STEP 2
Melt the butter. Crumble the shortbreads in a bowl, then add 2 tsp. of melted butter. Place the shortbreads at the bottom of a dish and freeze in the refrigerator. Pour the cream and sugar into a saucepan, mix, then heat to a simmer. Add the chocolate off the heat, mix again, then add the cheese cream and cottage cheese. Mix well. If the mixture is not smooth, mix it in a blender. Pour it gently over the biscuit layer. Bake for 30 min.

Mascarpone cream
STEP 1
Mix all the ingredients of the mascarpone cream in a mixer.

STEP 2
Place in a pocket with a Saint-Honoré tip and place large cream nuts on the cheese cake. Proceed in a circular manner, from the outside to the inside.

STEP 3
Peel the lemon on top.

STEP 4
Pick up its supremes, cut them in half, then dress them on the cheese cake.
