-500 g flour
-4 eggs
-50 gr sugar
-50 gr butter
-1 pinch salt
-a zest of lemon
-2 vanilla beans
-2 tablespoons liqueur
-5 tablespoons honey
-Frying oil

1-Mix the sugar with the eggs. Whisk to blanch. Pour your flour into a bowl and make a well. Add the egg + sugar mixture, lightly melted butter, vanilla and a pinch of salt. Then add the liqueur and work the dough again. Flour your work surface and place the fit. Form small balls the size of a ball… You can ask for help from your children who will be happy to participate!
2-Heat oil for frying.
3-Put the small balls in the hot oil and let them cook until they take on a golden color. Then remove the struffoli from the oil and place it on paper towels.
4-Meanwhile, melt the honey over low heat; add the zest of a lemon and simmer while stirring until the honey is liquid.
5-Place the struffoli in the honey. Mix carefully so that all the beads are coated with honey. Then place the struffoli in a dish and let cool.
